Tamale Lentil Casserole



This is one of my family's favorite meatless dishes.

Ingredients:



1 Tbs olive Oil
1 large onion, chopped
1 small green bell pepper, chopped
2 cloves garlic, finely chopped
3 cups water
1 1/4 cups dried lentils, sorted and rinsed
1 (14 oz) can tomato sauce
1 package of taco seasoning mix

Cheese Cornbread Topping
1/2 cup shredded cheddar cheese
1/4 cup milk
1 (8 1/2 oz) package cornbread muffin mix
1 (8 1/2 oz) can cream style corn
1 large egg



1.) Heat oil in deep dish skillet or 3 quart saucepan over medium-high heat.
2.) Cook onion, bell pepper, and garlic in oil, stirring frequently until vegetables are tender.
3.) Stir in water, lentils, tomato sauce and seasoning mix; reduce heat to low.
4.) Partially cover and simmer 35 to 40 minutes or until lentils are tender.
5.) Heat oven to 400 F.
6.) Grease 2-qt casserole dish with shortening or spray oil
7.) Prepare Cheese Cornbread Topping by mixing all ingredients until moistened.
8.) Spoon lentil mixture into casserole.
9.) Spread Topping evenly over lentil mixture.
10.) Bake uncovered 15 to 20 minutes until topping is golden brown.

FREE Event at TN Ag Museum



This Saturday is the fourth and last in the Summer Saturday Series at the Tennessee Agricultural Museum.

This week it's "Wild Wings and Creepy Things". You’re invited to the fantastic world of wild wings and creeping things. Featuring birds, butterflies and bugs with the experts who study and protect them. Butterfly nets, a station for identifying and releasing the winged beauties plus big bug games and an observation bee hive are on the agenda. Get close to a red-tailed hawk and other large birds of prey as you talk with a lady dedicated to rescuing them. And check out the Tennessee Wildlife Exhibit

Runs from 9am - 2pm on Saturday. My 5-year old had a blast at the previous events and is looking forward to this one. It's a great time, if you can stand the heat. But you can get a break from the heat by touring (for free) the indoor Ag Museum.

Is that movie okay for your child to see?



I am constantly challenged with "is that movie okay for my child to see?" or "What about that video game? is it appropriate?"

I've started using Commonsense.org as a guide to selecting movies, websites, video games, music and TV shows for my family.

It breaks everything down, language, violence, sex, alcohol & drug use, consumerism. It even tells you what kind of message it sends to children, for instance in their review of Despicable Me tells you that there may be a concern particularly for adoptive families because of the way orphans and orphanages are portrayed. This is a concern for my family and I will be better prepared to talk to her about the portrayal should we decide to even see the movie.

My Publix Shopping List


I'm back at Publix after taking a week off. Here are my favorite deals.

A few points about Publix:

1.) They will double coupons up to .50 cents.
2.) BOGO items ring up at half price, and you only have to buy one item to get the discount.
3.) You can use a coupon on each BOGO item.

2.) You must pay a quarter to use a shopping cart. You get the quarter back when you return the cart to the holding area.

It's Fall Consignment Sale Time!



It's time for the fall consigment sales to startup. I love consigment sales! It's where my daughter has gotten most of her wardrobe her whole life. This fall things will change a little for us because she begins school that has a uniform. But I still plan to hit up my favorite consigment sales for play clothes and maybe even a little early Christmas shopping.

Consignment sales are often huge and overwhelming. Here are some tips for making the most of the sales:

1.) Prepare ahead of time! Check your child(rens) closets and make a list of what is needed. Bring the list with you so that you don't forget what you are really looking for.

2.) Set a dollar limit and stick to it. This rule has helped me so much. It's very easy to get carried away and before you know it, you've got $250 worth of clothes in you basket. Do you really need $250 worth of clothes??

3.) Bring cash. Most consignment sales do accept checks and credit cards, but they always take cash. I believe taking cash helps with tip number 2. If I only have $50 dollars on me, then I can only spend $50 dollars.

4.) Bring a basket. Very few consignment sales provide carts or racks to shop. Bringing a laundry basket or a mesh bag will be a lifesaver!

5.) Pick out boys clothes first. There is almost always less boy clothing than girl. The good stuff goes fast. Make the boy aisles your first stop.

2.) Some will accept competitor coupons, check with your store

Free Saturday at TN Ag Museum


This week continues the Summer Saturdays event at the Tennessee Agriculture Museum. This week it's "Old McDonald's Farm". Help groom and feed miniature donkeys. Small $3 fee for rides. Look for wooly sheep, chickens, a spotted mule, spinning wheels and the friendly blacksmith. The garden gate will be open and heirloom seeds available for purchase.

My 5 year old and I went last week to "All About Goats" and we had alot of fun. The whole area is open, including the stables where Metro's mounted patrol is stationed. We got to see and pet some of the police horses.

Olde World Theatre presents: Little Red Riding Hood


In my house we're very excited whenever Olde World Theatre presents a new show. The latest production is:

"Little Red Riding Hood."
It's a story of a girl who experiences the consequences of not making the right choices. Along the way we will meet Grandma Millie, the Big Bad Wolf, and other colorful characters.


This show will have cool music, special effects, mime dance sequences, and fun, silly comedy to tickle your funny bone.

Kid friendly and appropriate for all ages.

Summer Harvest Ravioli



I haven't posted a recipe in a while. So I thought I'd share a recipe I developed using several items that have been on sale for a good deal over the last week or so. I've noted the items I used from current or recent sales and the prices.

Ingredients:

1 bag of frozen ravioli (Publix: $1.25)
1/2 cup water
4 oz green beans (Kroger, .88/lb)
2 Small Yellow Squash cut into 1 inch pieces (Kroger, .88/lb)
2 Zucchini, cut into 1 inch pieces (Kroger .88/lb)
1 Medium yellow onion, cut into 1/4 inch wedges
2 cloves of garlic, finely chopped
4 oz cherry tomatoes cut in half OR 1 can tomatoes (Kroger, .24)
2 tablespoons dried oregano
3/4 teaspoon salt
1 tablespoon olive oil
1/2 cup Parmesan cheese

1.) In a large non-stick skillet, heat water to boil. Add beans, boil 7-10 minutes until tender-crisp. Drain. Set aside.

2.) In same skillet, heat oil over medium-high heat. Cook squash, zucchini, onion, garlic, oregano and salt in oil about 7-8 minutes. Stir frequently, until onion is tender.

3.) While vegetables are cooking, prepare frozen ravioli as directed on bag.

4.) Stir in tomatoes and greenbeans to vegetable mixter and heat until hot. Serve vegetable mixture over pasta. Sprinkle with Parmesan cheese.

Target Clearance: Shoes up to 75% off!



Stopped by Target tonight and hit upon a great deal on kids shoes!

Right now Target has alot of shoes clearanced, Kid and adult sizes are 30%, 50% and 75% off. I only found the kids shoes at 75% off, but if you hunt long enough you may find some adult shoes at 75% off too.

A bit of advice: Check the actual tags for the % off. The signage only indicated 30% off, but after looking closer, I found alot of shoes at 50% and 75% off.

The Ten­nessee Agri­cul­ture Museum is having a FREE series for the family called Summer Saturdays. Each week there is a different topic and activities. This week it is, “All About Goats’’ from 9 a.m. – 2 p.m. Sat­ur­day.

Kids can pet the goats and even feed and milk them. Then visit the log cab­ins and see sap being made, check out the bee­hive and enjoy some face paint­ing too. Best of all, IT'S FREE!

Locals: Great Deals on Brand-New Dresses at Southern Thrift



Made a quick stop at Southern Thrift on Metroplex drive today and they have a bunch of brand-new women's plus-size dresses available. I found dresses starting at size 12 going all the way to 24. These dresses still have the original pricetags on them. Many came from stores like Talbots, some came from Ross.

The Southern Thrift price is at least half the price of the original retailer and many are marked with the 1/2 price color of the week, which means an additional 50% off the Southern Thrift price.

Target: Hot New Coupons




Check out the coupons available at Target right now.

Currently there is a $5 off 1 Champion C9 Clothing item. I was at Target earlier today and they had alot of C9 workout clothing marked down. I found women's workout shorts on clearance for $5.58! With the coupon, that will make .58 cent shorts! Can't beat that!
