Weekly $5.00 Dinner Menu Plan


I aim for $5.00 a meal, sometimes I'm a little over. I calculate the main ingredients prices and round up for smaller ingredients such as spices. I am able to make most dinners for $5.00 or less because of my coupon shopping and stockpiling.

Grocery Finals

Wow! I am so happy I got all my grocery shopping in one trip on one day. I hit four stores. I'm pretty happy with my total. I received a $10 gift card to Publix in exchange for some babysitting so that helped to keep my out of pocket well below my preferred $40/week budget. I also did something that I never do anymore, I bought meat! Ground beef. We are mostly vegetarian in my household, except for the lunch meat I buy for my daughter's school lunches and an occasional chicken dinner. It works for us. So, I hope I got a good deal on the ground beef.

Baby Shower for One Thousand Newborns


Do you have extra packages of newborn diapers that your baby grew out of? Or maybe you stockpiled a too many packs of newborn onesies? Do you have unopened cans of formula that you didn't use because it didn't work for your baby? I know several of these scenarios have happened to my friends and family. So, here is an opportunity to take those extras and pass them on to some babies who really need them.

United Way is making a difference by initiating a city-wide effort to collect essential baby items that will help prepare at-risk mothers to give their newborns a stronger start. Together, they want to give over 1,000 newborns the supplies and support needed for a healthy beginning.

Hansel & Gretel at Belcourt Theatre

My daughter loves any kind of performance art; plays, dances, puppet shows etc. So I am always on the lookout for a performance at a good deal. I recently ran across Olde Worlde Theatre. They are a theatre group that's been in Nashville for a few years. They like to take traditional fairy tales and bring them to life, with a new (hopefully a little less grim) spin.

Starting this Saturday Olde World theatre will be retelling the adventure of Hansel and Gretel Schnitzel. It’s a timeless classic of hunger and hope, cruelty and courage, life and love. When the family unexpectedly falls to hard times, Hansel and Gretel’s journey begins. Our heroes then learn how to be resourceful, cooperative, and grateful for what they have. Please come and enjoy mime, movement, colorful characters, special effects, and dynamic music, as Olde Worlde unfolds an interactive extravaganza for all ages

Children are invited to wear their costumes as well.

All performances are kid-friendly.

Lentil, Corn and Sweet Pepper Chili

I got this recipe from Weight Watchers Simply Delicious Winning Points Cookbook (see my left sidebar for more info). It was a huge hit with my family, even with my 4 year old who won't eat anything unless it it's a french fry.





Ingredients:

2 tsp extra-virgin olive oil

1 large onion, finely chopped

1 (28 oz) can crushed tomatoes

1 cup low-sodium vegetable broth

1 1/2 cups lentils, picked over, rinsed and drained

2 cups fresh or frozen corn kernels

1 large red bell pepper seeded and chopped

1 (4 1/2 oz) can chopped green chiles, drained

1 tsp of ground cumin

1 tsp ground coriander *

1/2 tsp salt

1/4 cup finely chopped cilantro


* note: I did not have coriander. I found it at a supermarket for $4.99 a bottle. I was not going to pay that just for this recipe. So, I just left it out. The recipe was fine without it.



Directions:

1. Heat a nonstick Dutch oven. Swirl in the oil, then add the onion. Saute until golden, about 7 minutes. Add the tomatoes, broth and lentils; bring to a boil. Reduce the heat and simmer, covered 20 minutes.



2. Add the corn, bell pepper, chiles, cumin, coriander and salt. Return the mixture to a boil. Reduce the heat and simmer, covered, until the lentils and vegetables are tender, about 15 minutes. Stir in teh cilantro.



265 calories per serving and 5 points (for you point counters out there!)



Can serve with cornbread or tortilla chips (of course if your counting points or calories this will make it go up). I served biscuits with ours because that's what I had on hand.

Grocery Finals

This week, I worked hard to stay within my preferred $40 budget. I was close. I also set a $5 dollar limit for Halloween Candy this year and that was included in the $40 budget. In years past, it's not unusual for me to spend $15 or $20 on candy, and still have quite a bit left, so we'll see how this year works out. I did not buy traditional candy. Just could not find a deal good enough to fit my budget. So, I purchased 8 Betty Crocker Fruit snack (BOGO at publix) and used coupons to make them .60 each. Making my total $4.80. And I got 80 individual packs of fruit snacks. Halloween candy -- Done!

Indoor Playgrounds in Nashville Area

It's starting to turn colder, so the ability to play outside will be getting less and less. There are a couple of great FREE indoor playgrounds that I've found that does not involve having to buy and feed your child a happy meal or chicken nuggets (wink, wink)


Christ Church on the South side of Nashville has a great indoor playground. It's opened:

Cornerstone Church on the North side of Nashville is said to have the largest indoor playground in Nashville! They are open to the public:

Free Kid's Printable Worksheets


My 4-year old is trying very hard these days to learn to write words, especially her name.

There is a great website called printactivities.com that give you free traceable letter worksheets, coloring pages for all occasions, connect the dot exercises, and many other pre-school and elementary level activities. My favorite worksheet is the traceable name. They have hundreds of name worksheets. Perfect for my kid whose determined to spell her name... and it's a long name!

Of course, you do still have to use your paper and printer ink, so don't go crazy printing all the great activities until you know what you child wants to do.
